They are also the most highly marketed coffees in the world. Everyone knows Juan Valdez. The Coffee Federation of Colombia has done an excellent job of connoting in the American public's mind that Colombian coffees are the "richest coffees in the world." Our importers made a recent visit to the southern Huila region of Colombia, they noted that the concept of separating truly excelllent coffees at the mill from the common or just OK coffees was still a very rare practice. Previously, all of the premium coffees would be blended in to the common coffees, thus not allowing the farmers any premium price for their exceptional work. On a recent trip, this particular lot of coffee was discovered and 'rescued' from the pack before being blended in to the common coffees at the mill and effectively dissapearing. These 'Palestina' green beans are sun dried (in fact, most coffees from southern huila are sun dried, they can not afford dryers!) This lot possesses a slight citrus start, with a lasting caramel finish. A must try, and a great representative of what a great Colombian coffee can be when the farmers focus on quality, as opposed to quantity. But with all of this... what's the VERY best part about our Colombian coffee? It hasn't been roasted yet!
